Gelato ( jeh-LAH-toh ): a soft rich Italian ice cream containing little air as well as little to
no cream.

Gelato is Italian ice cream made from milk and sugar, combined with other ingredients. “Gelato” is an Italian word for “frozen” 
and comes from the Italian word "gelare," meaning “to freeze”. Gelato made with water and without dairy ingredients is known as sorbetto (sor-BEH-toh).

Gelato is about 1/2 the calories and 1/3 the fat of American-style ice creams. Because gelato generally has less than
35% air, the resulting product is more dense and intensely flavorful. The key to making the best gelato is to use the
finest ingredients and handcraft it into small batches on site every day.
